Ivonne’s Pambazo Recipe:
Pambazos are made of a white bread without a crispy crust. It is filled with chorizo and potato, dipped in warm red guajillo pepper sauce, fried, and garnished with shredded lettuce, sauce, cream and fresh cheese.
Bolillos (Mexican bread rolls) or crusty sandwich buns
2 tablespoons vegetable oil
3 medium potatoes, peeled and diced
½ cup of lettuce, shredded
½ cup of sour cream
½ cup of crumbled queso fresco or cotija cheese
¼ cup of sliced onions
1-2 dried guajillo chillies (for the sauce)
1 medium tomato
1 clove garlic
Salt
¼ cup of vegetable oil (for frying)
Background:
Pambazos are a delicious, traditional Mexican dish from Mexico City. We don’t eat them everyday or too often but when they are made, it gives you a taste of satisfaction. The soft, but crispy bread filled with savory recipe ingredients such as chorizo and potatoes, soaked in a red sauce, is irresistible. There’s something about them that satisfies both your hunger and craving making every bite worth it.
Pambazos are special to me because they remind me of the good times I spent with my friends. Whenever they would come, we would be laughing and talking while enjoying the food. It wasn’t only about the pambazos but the memories and bonding we created over something simple but enjoyable.
